Lamb Stir Fry

With ginger and coriander

NET 400g | Preparation time – 15 minutes | Cooking Time – 10 minutes | Serves 3-4 (under Tick recipe guidelines)

Ingredients

 

400g Silver Fern Farms’ lamb stir-fry

1 cm piece fresh ginger, grated

2 cloves garlic, crushed

1 chilli, seeded and chopped

1 Tbsp lemon juice

1 Tbsp honey

2 Tbsp reduced-salt soy sauce

1 Tbsp sesame oil

3 spring onions

2 stalks celery

100g fresh green beans

8 florets broccoli

2 cups bean sprouts

2 Tbsp fresh coriander, chopped

2 cups cooked basmati rice

 

Cooking Directions

 

Mix together the ginger, garlic, chilli, lemon juice, honey, soy sauce and sesame oil. Marinate the lamb in the mixture for 15 minutes.

Heat a frying pan or wok. Cook the lamb for 2-3 minutes and remove from heat. In a separate pan, stir-fry the spring onions and celery until soft, and then add the beans and broccoli. Just before serving add the bean sprouts and coriander.

Add the cooked lamb and toss to combine. Serve with rice.
