Lamb Leg Roast

With roasted potatoes and oven baked vegetables

NET 400g | Preparation Time – 15- 20 minutes | Cooking Time – Med rare 30-35 minutes / Med 35-40 minutes | Serves 3-4 (under Tick recipe guidelines)

Ingredients

 

1 Silver Fern Farms’ lamb leg roast

1 small onion, finely diced

1 clove garlic

½ cup fresh breadcrumbs

¼ cup chopped parsley

1 Tbsp pinenuts

1 Tbsp raisins

 

 

Cooking Directions

 

Stuffing

Sauté the onion and garlic in olive oil until soft. Mix with the breadcrumbs, parsley, pinenuts and raisins. Place the stuffing mixture in a small baking dish and cover.

Lamb Leg Roast

Heat oven to 200°C. Remove roast from its packaging and place in a roasting dish. Bake the roast and the stuffing in the oven for 30-40 minutes depending on your desired rareness. Once cooked, cover the lamb and allow it to rest for 5 minutes. This allows the roast to reabsorb its juices and helps ensure tenderness.

Slice the lamb across the grain and serve with vegetables and potatoes roasted in olive oil.
