Ingredients
1 packet of Silver Fern Farms’ lamb loin fillets
4 Tbsp cajun spice mix
Olive oil
Ciabatta bread
Basil pesto
Lettuce leaves
Slices of red capsicum & cucumber
2 Tbsp mayonnaise

Cooking Directions
Coat lamb with Cajun spice mix. Leave to rest for 30 minutes.
Heat a frying pan until very hot. Coat lamb with a little olive oil and sear each side until golden brown.
Transfer seared lamb to a pre-heated oven (200°C) and bake for 5-6 minutes. Remove and allow lamb to rest for another 5-6 minutes before slicing thinly.
Thickly slice the ciabatta. Spread with some basil pesto. Layer with lettuce leaves, capsicum and cucumber.
Gently layer the thinly sliced lamb over the vegetables and top off with a spoonful of mayonnaise.
